Healthy Holiday Quiche

10 egg whites

1 tbsp olive oil

½ cup roasted red pepper, chopped

2 cups fresh spinach

½ a medium sized sweet onion, chopped

½ cup mushrooms, chopped

¼ cup goat cheese (full or low fat)

Salt and pepper to taste

This is a very simple recipe that can be made in a matter of minutes. Grease pie pan and preheat oven to 350F. Place 1 tbsp olive oil in a non-stick pan and set to medium-high heat. Place chopped onion in pan and mix until tender. Add mushrooms, spinach, and roasted red pepper. Cook until mushrooms are tender. Take off the heat and place in separate bowl.

Place 10 egg whites into a large bowl and add in the onion, mushroom, and pepper mix. Mix well. Add salt and pepper to taste. Pour mixture into pie dish and place in oven for 20-25 minutes or until set. Cut a slice and crumble desired amount of goat cheese on top. This savory holiday dish is perfect for a healthy and filling breakfast.

Grinch Smoothie

1 banana

1 orange, peeled

½ avocado

1 handful of fresh spinach

1 tsp turmeric

½ cup ice

¼ cup water (or coconut water for more potassium)

Place all ingredients in blender and blend until the mix is smooth and no spinach leaves are distinguishable. This smoothie is deliciously green and full of antioxidants, calcium, and healthy fats to keep you satisfied. Turmeric helps with inflammation and is tasteless when put in the smoothie.

Healthy Veggie Dip

¾ cup plain fat-free yogurt

½ cup finely chopped red onion

3 tbsp fresh cilantro

1 tbsp jalapeno pepper

2 tbsp lime juice

1 tbsp cumin

½ tsp salt

3 avocados peeled and chopped

1 clove of garlic
